Beetroot & Chicken Wings Platter

These “beets of chicken wings platter”, as I like to call it, is so easy and unconventional. A meal made from just wanting good but easy food. I had bought a bunch of fresh beetroot from the farmers market in Milan. This was going to be the first meal I made since my move to this beautiful city. I pulled the bunch of beetroot from the fridge where I had left them the day before. Then I grabbed some chicken wings, not really sure where I was going with this. My eyes were drawn to the leaves of the beetroot, which I chopped and tossed into a bowl with the chicken wings. Plus some other items that just happened to be in the kitchen.

Cooked in the oven, spread over a bed of fresh lettuce, which I also bought from the farmers market. I topped it off with the actual beetroot fruit, which were so vibrant in colour and a perfect burst of flavours. This recipe produces a rich, moist and flavourful platter of wings. You will notice that this is not a grilling or roasting cooking process because of the lack of oil. My aim was to draw out the natural moisture of the chicken combined with the vegetables and pesto.

Ingredients
  

  • 6 whole Chicken wings
  • 2 Beet plant (whole beetroot)
  • a handful of Lettuce
  • 1 Glove of Garlic (Minced)
  • 1 Large Plum tomatoes (Chopped)
  • 1 tsp Pesto (I used one without garlic + a lot of Parmesan cheese
  • 1 thumb-size Ginger (Minced)
  • Half an Onions (chopped)
  • Black pepper & Salt
  • 1 tbsp Apple cider vinegar

Instructions
 

  • Cut off the beetroot fruit from the stem and leaves. Set the beetroot aside, thw=en roughly chop the stem and leaves and set aside.
  • Place the chicken wings in a bowl, add the garlic, onions, salt, pepper and apple cider vinegar. Mix together with your hands. Marinading is optional, but if you want a richer flavour, marinade for 30 minutes to 1 hour.
  • Pre-heat oven to 180 degrees Celsius. 
  • Toss in the chopped tomatoes, chopped beetroot leaves and teaspoon of pesto. Mix altogether and pour into a baking dish.
  • Place the baking dish into the oven and cook for 30 minutes.
  • Remove from oven and set aside to rest. Now cut the beetroot fruit into thin slices.
  • Wash and lay out the lettuce on a platter, serving dish or tray. Take the chicken wings out of the baking dish and place over the lettuce spread.
  • Finally top it off with the sliced beetroot fruits and enjoy
